Green Goddess Bowls

 

 

 

So I just received my new mattress from LEESA and I have to say I’m obsessed! I decided to make these green goddess bowls so I could eat them in bed instead of going for brunch. Sundays are for staying in bed anyways right??

Green Goddess Bowls

INGREDIENTS

  1. veggies for roasting;  brussel sprouts, sweet potato, broccoli and zucchini
  2. lettuce
  3. quinoa
  4. avocado
  5. extra virgin olive oil
  6. sea salt & pepper
  7. lime
  8. chia seeds
  9. parsley
  10. your favorite vegan creamy dressing (*optional)

INSTRUCTIONS

  1. preheat the oven to 400 degrees.
  2. drizzle the brussels sprouts zucchini, and sweet potato with olive oil, sea salt and pepper.
  3. roast for 25-30 minutes until tender (zucchini may cook faster, so check on it and remove and set aside when done)
  4. cook quinoa according to package directions in water or vegetable broth
  5. add parsley and lime juice to quinoa and mix
  6. arrange everything into a bowl or mix together!
  7. sprinkle with chia seeds
